Four ingredients doing the work of fifteen: vodka sauce, pepperoni, burrata, hot honey. That's the pizza.

The vodka sauce brings creamy acidity (you taste it but can't place it). The pepperoni cups up in the bake and releases pools of spiced fat. The burrata is torn fresh on top right out of the oven, the outside stays intact but the inside melts into the hot pizza like liquid silk. The hot honey laces the whole thing with sweet heat that cuts through the richness.

This is one of those pizzas where someone takes a bite and goes quiet for a second. Give them a minute. Then watch them reach for another slice.

Ingredients

Dough (1 ball)

Vodka sauce (makes enough for 3 pies)

Directions

  1. Heat oil in a saucepan. Sauté onion 5 min. Add garlic, 30 sec. Add tomato paste, cook 2 min until brick-red. Deglaze with vodka, simmer 2 min. Add crushed tomatoes + red pepper flakes. Simmer 5 min. Stir in cream. Salt to taste. Cool.
You'll know it's right: Sauce should be thick, glossy, and deep orange-pink. If it's red and runny, simmer more. Tomato paste should darken to a deep brick-red before vodka goes in, that's the toasted flavor base. If sauce tastes harsh/alcoholic, simmer longer to burn off the vodka.
  2. Stretch NY dough ball to 14 inches. Don't roll it.
You'll know it's right: Stretch by hand, push from center outward. The dough should be thin enough in the middle that you can see your hand through it, with a 1/2 inch rim untouched on the edge. Rolling kills the open crumb.
  3. Base layer: 4 oz vodka sauce, spread thin. Shredded mozz. Pepperoni laid out evenly (they'll cup up and fry in their own fat during the bake).
You'll know it's right: Sauce should be a THIN layer, you should see the dough faintly through it. About 4 oz total. Mozz in a uniform thin layer (not piled). Pepperoni in single layer, edges nearly touching but not overlapping.
  4. 550°F Baking Steel, 6-8 minutes. Watch for leopard spots on the rim, browned cheese in the middle, and cupped pepperoni.
You'll know it's right: Three visual checks: (1) dark leopard spots on the rim, (2) cheese is bubbly with brown spots in the middle, (3) pepperoni cupped with charred edges and oil pools inside. All three = ready. Any one missing = needs 60-90 more seconds.
  5. Out of oven, immediately tear the burrata over the top, let the residual heat warm it without fully melting. Drizzle generously with hot honey. Torn basil. Microplaned parm. Rest 2 minutes before cutting.
You'll know it's right: Burrata should be torn open (not dropped whole) so the creamy interior pools onto the hot pizza. The outer shell stays intact, the inside melts slightly from residual heat. Hot honey in a zig-zag drizzle pattern, you want streaks across the whole pie, not a pool in the center.

Troubleshooting

Vodka sauce broke when I added cream

Cream added to too-hot sauce, OR you used low-fat cream. Let sauce simmer down off direct heat for 30 seconds before adding cream. Use HEAVY cream (36%+ fat), not half-and-half. Stir slowly and constantly to emulsify properly.

Burrata completely melted into the pizza

You added burrata too soon after pulling pizza from oven, OR you put burrata on BEFORE baking. NEVER bake burrata. Add it 60-90 seconds AFTER pulling pizza from oven. The outer shell stays intact, the inside warms just enough to be creamy. Baking it turns it into regular melted mozz.

Sauce tasted boozy and harsh

Didn't cook off the alcohol after deglazing. After adding vodka, simmer 2-3 minutes BEFORE adding tomatoes. You should smell the alcohol burning off. Then proceed with tomatoes.

Hot honey burned my mouth in a bad way

Too much hot honey OR an extra-spicy variety. Start with a 1 teaspoon drizzle for the whole pie. Mike's Hot Honey is the standard heat level. Extra Hot varieties are for serious chili-heads only.

Pepperoni didn't cup

You used standard deli pepperoni, not natural-casing cup-and-char. Need Ezzo, Rosa Grande, or Battistoni brand. Standard Hormel won't cup. Without the cup, you don't get the spiced oil pools that define this pizza.

Pizza was too rich and one-note

Too much sauce, too much cheese, or you skipped the hot honey. Stick to the ratios: 4 oz sauce, 4 oz mozz, 4 oz burrata after. The hot honey provides the acid/sweet/heat contrast that prevents the pie from being one-note rich.

Vodka sauce tasted bland or watery

Didn't simmer the tomato paste long enough (it's the flavor foundation), or didn't reduce the sauce enough. Tomato paste needs 2-3 minutes of cooking until it darkens to deep brick-red. That toasted flavor is the base of vodka sauce. Reduce sauce until it coats a spoon thickly, about 8-10 minutes total simmer time.

Notes

Burrata goes on AFTER the bake. Baking burrata turns it into regular mozzarella and wastes the whole point. The hot honey drizzle is non-negotiable, cheap regular honey won't cut through the vodka sauce richness. Mike's Hot Honey is the standard.
